Baked Onion Rings

Do you love onion rings as much as I do? I found this recipe a few years ago when I was doing Weight Watchers. Of course it isn't as good as the real deal. How could it be when there is no oil :) But they are quite yummy and help satisfy that craving. And each serving is only 2 points.

1/2 Cup Egg Beaters (I used 2 egg whites with a little milk)
2/3 Cup seasoned bread crumbs
1/2 tsp. salt
1/4 tsp. black pepper
2 large Vidalia onions(has to be the sweet onions)

Place egg beater in a shallow dish. In another dish, combine bread crumbs, salt and pepper. Dip onion rings into egg, then roll in crumb mixture. Place on a baking sheet with nonstick spray. Bake at 425 degrees for 15-20 minutes or until golden brown. Turn onion rings over half way through. Yields 4 servings.

Johnny Appleseed Pork Chops

6 thick boneless pork chops
1 (6 oz.) box of stuffing mix, including the ingredients to prepare stuffing
1 (21oz.) can of apple pie filling with cinnamon

  1. Heat oven to 350 degrees. Brown pork chops in a frying pan and let rest on a plate while preparing stuffing mix.
  2. Pour apple pie filling into 9 x 13 inch pan and spread evenly.
  3. Put pork chops on top of apple pie filling and then put prepared stuffing on top of pork chops. Cover with foil and bake for 1 hour.
